Five years on from planting their flag on Wellington Street in Collingwood, Molly Rose have brewed a tribute to the home with Wellington Bitter. It's not just a celebration of place either, with the beer tipping its hat style wise to classic Australian pale ales, like those with green (or occasionally red) labels out of Adelaide.
Brewed with entirely Australian ingredients, the pale steers clear from modern hop notes and instead brings a soft sign of floral and somewhat earthy aromas. The yeast meanwhile brings clove-like esters while some biscuit carries through on the palate as a crisp edge cuts into a lasting bitterness that makes for a beer that's both refreshing and something of a moreish meal.
