Whenever you drink a beer, you’re drinking science. It might not be obvious every time you order a beer but without applied knowledge, chemistry and labwork, you’d be drinking a glass of barley steeped in water and bitter plant matter. Science Made Beerable is a group born to make that science stand out when we drink. And, for 2023’s exBeerimental Science, they asked three breweries to brew two beers each with more or less the same ingredients and one sciencey twist.
Among them was Molly Rose, who made a batch of dark, malt-driven wort and then fermented it with two different yeasts. Polished was made with a lager yeast to create a Bock and the result is a beer with biscuit, toffee and caramel flavours and quite a lean and dry side.
Adorned, however, used a Belgian Trappist yeast to make a dubbel-style beer. Interestingly, it isn’t just the flavour profile that’s quite different but the texture and body too; Adorned pours with a foamy head and delivers a pretty thick, textural mouthfeel. There’s also an added richness that brings added spiced fig, banana, cloves and spice.
