What do you get when you cross a brewery with a chef and his market garden? A pickle beer, obviously…
Although maybe not an obvious match, Eagle Bay and Guy Jefferies, of Millbrook Winery, along with West Leederville bar Besk have been brewing up collaborative beers and events for some time now. Their latest, a pickle-spiked gose is another triumph in which all things homegrown and fermented shine.
Launched alongside a pickle masterclass by Guy Jeffreys in Besk’s dimly-lit basement, featuring a specially-curated menu, Pickle Gose To Garden is a surprisingly humble offering despite the fanfare. Fun in nature, it's a delicately balanced sour that features a bucket load (literally) of salty-sour pickle brine concocted by Guy. Garlic, dill, horseradish and chilli yield bright aromatics that lend themselves well to Eagle Bay head brewer Keegan’s clean, light and striking base beer. A touch of lemon zest boosts citrus aromatics while a generous dose of sea salt ensures that famed salty edge is present, and pleasant.
As far as collabs go, this longstanding love triangle between Eagle Bay, Besk and Millbrook is yielding quality beers of interest and still looks to have plenty of legs.
