There is never a dull moment at Deeds, with a steady stream of beers and spirits being made in their Melbourne home. 

If you'd like to join them in Glen Iris, they're searching for a brewer and distiller. 


Job Description: Brewer/Distiller

If so, we have the perfect role for you! We are seeking an experienced distiller and brewer who shares our love of innovation, creativity and the art of crafting delicious beverages. You’ll have the opportunity to work with the latest equipment and high-quality ingredients to produce products that will leave a lasting impression on the industry. 

At Deeds, we understand the hard work and dedication it takes to perfect the craft of brewing and distilling. We’re looking for someone who has the skills and expertise to bring their A-game every day, while also being open to collaborating with others to push the boundaries of what’s possible.

Key Responsibilities

Distiller:

  • Deliver high-quality wash and spirits to meet specifications
  • Manage stock counts of raw materials and liquids
  • Ensure compliance with spirit legislation
  • Develop and implement spirit recipes
  • Plan production and maintain product consistency
  • Train staff on distillation techniques and equipment
  • Maintain accurate record-keeping for all wash and spirit data
  • Co-ordinate with the head brewer on all aspects of spirit production
  • Control stock across multiple warehouses
  • Develop and maintain SOPs
  • Preform general maintenance of the distillery area and brewery equipment

Brewer:

  • Have an understanding of aseptic sample collection and the ability to prepare samples for microbiological analyses.
  • Have excellence in brewing techniques and processes and recipe specifications.
  • Have excellence in operating equipment related to bottling and canning.
  • Management of all cellar activities including sample, jacket management, dry-hopping, centrifuge and finals testing.
  • Perform daily testing of all fermentations and record keeping.
  • Assistance of brewery and dining hall management staff in the Beer School Programme to be put in place for internal and external customer training.
  • Assistance with brewery tours where necessary
  • Work in the packaging area of production will be required.

Qualifications:

  • At least three years of experience in commercial distilling and brewing
  • Hold a Diploma of Distilling or Brewing from IBD (or equivalent) or a Bachelor’s Degree in a relevant scientific discipline.
  • Must have excellent brewing and distilling practices and experience operating related equipment

Other requirements:

  • Ability to perform physical activities appropriate to a distillery industrial operation
  • Up-to-date forklift license and excellent forklift driving skills.
  • Current RSA for Victoria must be maintained
