The phrase Sour Symphony – in a beer sense, at least – brings to mind the sort of funky Belgian blends that can scare off newcomers and send advocates into rapture. In the case of this summer release from Central Coast-based Six String, however, it's a far less divisive offering from another part of the sour beer spectrum altogether. If a gueuze is a sour beer played by Rachmaninoff, this one is more Tay-Tay.
It's a light pink symphony in three parts, on the fruit front anyway, with pomegranate, hibiscus and yuzu at play, their floral-meets-berry aromas and flavours soft in nature and balanced by the lacto-derived sourness. There's a pleasantly silky body considering there mere 3 percent ABV, the end result of which could almost pass as a light table rosé.
