Aztec Sour features white sapote fruit (also known as casimiroa, Mexican apple, and cochitzapotl) native to parts of Central and South America, but in this case grown just down the road from the brewery in Metricup. It's in the mix along with mulberry, corn syrup, quinoa, cinnamon and vanilla in an Aztec-inspired, hyper-fresh sour.
The first thing to capture your attention is the rich, mulberry hue. Yet its colour isn’t the most remarkable element of the experience given the long list of adjuncts added during the mash, boil and cold side – all of which combine to yield a unique and impressive flavour profile.
Ripe red fruits, moderate sweetness, and a balanced acidity build upon each other, forming the crux of the matter, while earthy tones, sweet vanilla, and soft spice all bolster proceedings in what's a refreshing, full-flavoured offering from the newly-crowned state champions.
