Australia's craft spirits industry continues to grow apace. Among those making a mark is Melbourne Moonshine. The South Melbourne based operation has such great demand for its hooch that it needs to take on a distiller.

If you'd like to join the founders, here's what you need to know.

JOB DESCRIPTION: DISTILLER (VIC)

The Opportunity

Melbourne Moonshine is looking to hire our very first production team member to assist in the continued growth of production output.

The role will be one of three in the production team (other two being the founders) so this is a great opportunity to become a key member of a business that is a part of the growing industry of craft spirits within Australia.

The Position

As we are a small team, you are generally expected to do almost all things required to produce, package and ship our products. These include (but are definitely not limited to):

  • Grinding of Grain, Mashing and Fermentation of Moonshine, Grain Whiskey, Single Malt Whisky and other distilled products;
  • Distilling of various products
  • Tasting, quality control and monitoring of distillation outputs
  • Barrel aging and management of maturation
  • Bottling and packaging of products
  • Maintenance and Cleaning of distillery and distillery equipment
  • Assisting in the expansion of the facility (planned for 2018)
  • Production planning and reporting – this role will be directly responsible for tracking distillery performance
  • Conducting presentations and tours of the distillery to visitors.
  • Available to work shift work when required

The Person

The most important prerequisite is that you are hardworking and good fun to be around. Melbourne Moonshine pride ourselves on being a fun (but at times hard) working environment so positive attitudes only need apply. In addition to this, we seek the following experience:

  • A minimum of 2 years working in an alcohol production environment – ideally wine making or brewing on a commercial scale;
  • Knowledge of fermentation principles and an understanding of fermentation control
  • Knowledge of industry standards of record keeping.
  • Experience in planning and assisting with preventative maintenance initiatives
  • Experience in stock control and inventory management
  • A good understanding of the Spirits industry
  • An Australian Drivers license
  • A forklift and truck license would also be ideal
  • Applicants with formal qualifications in brewing and/or wine making will be looked upon favourably.
