Venom Brewing has bought a hotel that will become its new home. It's reopening the Country Club Hotel in Yea and is looking to hire a head chef and sous chef in advance of its scheduled June launch date.
JOB DESCRIPTION: HEAD & SOUS CHEFS
Venom Brewing is on the hunt for a multi-disciplined Head Chef to lead kitchen operations and a Sous Chef to work alongside them.
We are reopening the Country Club Hotel in Yea, a beautiful country town just 100km from Melbourne. The venue will be reopened in early June.
Yea has a large and growing local population and a bustling tourist trade. We are looking to cater for both audiences, and with a large (150 capacity) function room, look to build and capitalise on events and functions, revolving around our growing range of beers.
As Head Chef, you will be required to write, cost and produce menus for different styles of service.
This is a great opportunity for a passionate chef to work with an experienced team, and to build a unique venue in an exciting marketplace.
The Role:
- Reporting directly to the General Manager, your responsibilities include:
- Menu design
- Cost control
- Stock control and ordering
- Recruitment and training
- Effectively managing the team and ensuring the quality service standard
- Working towards budget
- Staff management
- Communicating with front of house staff to ensuring service delivery in a high standard
- Maintaining a positive organisational culture amongst FOH and BOH staff.
The successful candidate must have:
- Experience within a fast paced / high volume environment.
- Experience in a fine dining environment.
- A high standard of food presentation
- Strong communication skills
- Strong leadership skills
- Ability to work in a dynamic team environment
