The first ever iteration of the Traveller is also the first ever limited release to come from the All Hands brewhouse. This is the first of what will be an ongoing series of saisons made from the same base beer but a different yeast, the idea being that you get to follow the Traveller, and the brewers, as they go on a journey exploring yeast.
For this particular beer, the brewers used the Lallemand Belle Saison yeast strain and planned for a fairly high fermentation temperature to bring out the most of those yeast characters. Still, they were taken aback by how high it actually got, showing both the experimental nature of the saison and the fact that they were, to a degree, still getting to grips with the intricacies of brand new brewing equipment. But in the end it all worked out rather well, with the extra few degrees helping push up the yeastie esters and phenolic profile. There’s a lot of orange character on the palate which makes it a lovely, lively and refreshing drop we found paired particularly well with a summer seafood salad.
