Following on from their Easter 2014 collaboration, Hoppy Bunny Massacre, the Flat Rock Brew Cafe invited its beer-loving neighbours at Beer Cartel in for another cooperative brew, resulting in the Cartel’s Jarrod Partington joining brewer Vince de Soyres in creating a Dark IPA. Having tasted the beer out of the tank a few days before it was due to be tapped, the name ‘Dark IPA’ seemed an apt one. Most would opt for labelling it a Black IPA, though that wasn’t ever the aim for this beer. In fact, it was almost the opposite.

They essentially wanted to create a typical IPA, plus the darkness of a black IPA, minus the big roast characters associated with the style. To do so, they chucked a load of columbus, cascade and amarillo hops in but opted for malts that would give a dark colour and offer few of the harsh roast or burnt characters. What you end up with is something that would perhaps be happier sitting in a category called brown IPA. At 60 IBUs, it does the job on the bitterness front and they seem to have nailed the rest of the brief too, with the malt playing its part on the eye and a more subdued, but certainly still noticeable, role once it hits your the back of your throat.
